Delicious Pumpkin Muffins Made Easy

Homemade is always the way to go, unless you are short on time, ingredients or ability.  Sometimes an easy recipe is a better choice.  I  have a delicious pumpkin muffin recipe you can make fast, only calls for two ingredients and it is so easy.

And did I mention it is delicious?

I don’t remember where I found this pumpkin muffin recipe (probably on Pinterest?) or when, but it is good and I make it several times during the fall months.

I tell myself it is nutritious, also.  And it is!

Pumpkins give you vitamin A (250% of your daily!), vitamin C, Calcium and iron. See, nutritious!

This recipe calls for two ingredients. Yep, only TWO!

First is obviously pumpkin.

Buy a pie pumpkin at the grocery store.  You can even find these cute little orbs at Target or other stores this time of year.

Now, here is the hardest part of the recipe–place the pie pumpkin next to a can of 100% pumpkin and a yellow cake mix and take a cute picture!

Now put the pie pumpkin in a cute spot in your kitchen and open the yellow cake mix!

Preheat the oven to whatever temperature the cake mix calls for (most likely 350 degrees). You’re about to have pumpkin muffins in about 20-25 minutes from the time you start to the time you are eating them!  Easy!

Pour the cake mix in a mixing bowl. Open the can of pumpkin and mix together.

Now, this is actually the hardest part.  Think of it as a little arm work out.  Mix the pumpkin into the cake mix until it is completely incorporated.  The mixture magically will turn from white and orange to a pretty shade of orange (the magic comes from your arm!)

Keep mixing…

Now, you are ready!

Place the pumpkin muffin mixture into the adorable cupcake liners you have already placed in the cupcake tin.

Spoon the mixture into the tin.  Be careful to clean any spills or it will be harder to clean up later. (remember this is all about easy!)

If you want to make this a three ingredient pumpkin muffin recipe, you can put dark chocolate chips in your muffins.  (I usually do this to at least three or four because I think everything is better with chocolate!)

When the tins are all filled, you them place them in the oven.  Say “Hey, Siri“, and start your timer.

About 12-15 minutes later, you are salivating with anticipation!

Now, I certainly don’t claim these are the best pumpkin muffins in the world, but I do claim they are the easiest, most delicious, according-to-the-time-and-ingredients-involved pumpkin muffins in the world!

Stick a tooth pick in them when Siri tells you they are ready.  Trust the toothpick not Siri.

I enjoy the them most straight out of the oven, with a pat of butter right in the middle.

Without the dark chocolate and butter, these are a great, nutritious breakfast, snack or dessert.  Yes, they have sugar.  But they are only 175 calories per muffin.  See?  Not bad! Around 2 grams of fat? (my math might not be perfect–I work from the other side of the brain!)
